Step 1: Prepare the Strawberries
Wash and dice the strawberries into small pieces.
Place them in a bowl and combine with the lemon juice and optional honey.
Allow the mixture to sit for about 10 minutes so the strawberries release some of their natural juices.
Step 2: Make the Cheesecake Filling
In a large mixing bowl, combine:
- Greek yogurt
- Cream cheese
- Honey
- Vanilla extract
Whisk until smooth and creamy.
The mixture should have a cheesecake-like texture without being overly thick.
Step 3: Prepare the Crust
Combine the crushed graham crackers with the melted butter.
Mix until the crumbs are evenly coated.
This layer provides the classic cheesecake flavor and a pleasant crunch.
Step 4: Assemble the Jars
Add a layer of graham cracker crumbs to the bottom of each jar.
Next, add a layer of the cheesecake mixture.
Spoon in some of the strawberry mixture.
Repeat the layers until the jars are full.
Finish with extra strawberries on top.
Step 5: Chill Before Serving
Place the jars in the refrigerator for at least one hour.
Chilling allows the flavors to blend together and improves the texture.
For best results, refrigerate for 3–4 hours before serving.
